I’ve put together this guide in order to give you a peek into my pellet smokers and what I do to make the most of it.

Tip #1: Smoker Temperature is King!

This tip may seem obvious, but it is non-negotiable if you want perfectly smoked foods every time. You must know your smoker’s temperature range and the correct way to control the heat. 

Depending on the type of pellets you use, your pellet smoker will produce different results.

1) Hickory Smoked Meat – The smoke ring is pink, and the flavour is stronger than most other pellets. Hickory also gives off a nice aroma during cooking which pairs well with beef and pork. If you want to achieve that traditional Texas taste, then this is what you need!

2) Mesquite Smoked Meat – The smoke ring is white, and the flavour can be described as strong, rich, and sweet. 

3) Apple Smoked Meat – The colour of this meat will have a lighter pink hue compared to hickory-smoked meat. The smoke flavour is lighter than hickory, but the taste of apple underneath is slightly detectable in your finished dish.

4) Cherry Smoked Meat – Light pink smoke ring and very subtle flavour. You can use cherry pellets if you want to pair your meats with fruits such as pineapple or peaches.

What you’ll need:

1) A probe thermometer to calibrate your smoker temperature and regulate it throughout your cook.

2) An oven thermometer inside your smoking chamber to give you an accurate reading of what’s going on inside.

3) A fire extinguisher nearby in case something goes wrong!

Calibrating your smoker’s temperature is very important if you want even cook throughout the entire smoking process. Every time I get a new bag of pellets, I always make it a point to calibrate my temperature settings.

I usually look for the highest setting that makes the pellets burn smaller and hotter, which produces an initial burst of smoke followed by even cooking temperatures. 

You can do this by dumping your desired amount of smoking wood into the hopper and then powering on your smoker. Note down your current temperature setting, wait 15 minutes for the pellets to be fully lit up, and check again.

Adjust accordingly until you find the right setting for each type of pellet in your smoker.

Tip #2: Clean Up After Your Cook

Believe me when I say that this is by far my least favourite part of using a pellet smoker because it takes up so much time and effort. I let my fire go out, scrape off all the burnt food bits, and use water to scrub it down before I put in a new batch of smoking wood.

1) A stiff wire brush and an oven cleaning spray.

2) At least an hour to clean up what inevitably will be a greasy mess!

For example, use your hickory pellets only on one side of the smoking chamber and place your mesquite or apple pellets on the other side. 

This helps give your meat a more robust smoke flavour and also prevents you from having to constantly monitor your temperatures to avoid burning your food.

Double smoking your meats is a great way to achieve that tasty smoky taste without having to change out the pellets. To avoid overcooking or burning your food, be sure to calibrate the temperature settings again after you’ve added extra smoking wood pellets.

Pellet smokers are great for giving you lots of leeway on your cooking times but remember that the final results will only be as good as what you put in. Expect to spend at least 4-6 hours smoking, so choose leaner cuts of meat with less fat content, or let them marinate overnight if time permits.
